Say, ‘yippee’ for Yamagoya: the iconic Japanese ramen brand are heading for Chinatown.
This December sees the arrival of Japanese ramen institution, Yamagoya in Chinatown for a six-month residency upstairs at Shuang Shuang on Shaftesbury Avenue. Founded in 1969 by Masatoshi Ogata, Yamagoya’s ramen is the stuff of legends thanks to Ogata’s three-year dedication to perfecting his recipe, which has remained a family secret for over three generations.
What makes Yamagoya ramen special? The masterfully balanced flavour its kaeshi marinade, the marination of chashu and taste and texture of the noodle. “It took a lot of trial and error to perfect our recipe, and my first customers at Yamagoya were my toughest critics,” explains Ogata. “Eventually though, my little restaurant was busy, and people were enjoying what we were doing. Today our focus remains the same as it always has; making delicious ramen for our guests, whether that be at home in Fukoaka or here in London.”
What can one expect from Ogata’s kitchen of wonders? The London residency menu will include their signature ‘Yamagoya’ ramen; handmade noodles immersed in a smoky tonkotsu broth garnished with Japanese chasu pork belly, marinated bamboo shoot, kikurake mushroom, nori, all topped off with a marinated Burford Brown egg. Heat-fiends will love the ‘Tobanjan’ – a fiery, spiced broth complete with chilli pepper.
Of course, there’ll be a host of tasty toppings like crunchy kimchi, nori sheets and pickled mustard takana to pimp your ramen, not to mention smaller plates such as goyoza chicken karaage and okra and salted plum.
Yamagoya don’t accept reservations so be quick to pop in to guarantee a table, simply head upstairs through the traditional red noren curtain into Ogata’s ramen world.
