Shaped by the multicultural fabric of London and his Malaysian heritage, Chef Seamus’ culinary identity is rooted in memories of his grandmother’s café in Johor - a legacy he honours through refined technique and soulful flavours.

Championing British produce, Seamus works closely with a network of small specialist suppliers to source exceptional ingredients. With just two sittings each evening at 6pm and 8.45pm, guests are invited to begin their experience with a pre-dinner drink at The Mulwray, the first-floor wine and cocktail bar, before taking their seats at the chef’s counter.

Since opening, Evelyn's Table have taken pride in championing exceptional young talent. Previous proprietors, including the Selby brothers and James Goodyear, each brought their own distinctive vision; cooking their own menus for the first time and helping establish Evelyn’s Table as a destination for some of Britain’s most exciting emerging chefs.
